Grilled Cajun Shrimp Skewers (Printable Version)

Succulent prawns marinated in cajun spices, garlic and lemon, grilled to perfection and ready in just 30 minutes.

# Ingredients:

01 - 1 pound tiger prawns, peeled, deveined, and tails removed (approximately 24 prawns)
02 - 2 tablespoons olive oil, divided
03 - 1 tablespoon lemon juice
04 - 2 tablespoons garlic, minced
05 - 1 tablespoon cajun spice (or Old Bay seasoning)
06 - 1 tablespoon Italian seasoning
07 - ½ tablespoon paprika
08 - 1 tablespoon parsley, finely chopped
09 - 2 lemon wedges

# Steps:

01 - Use scissors to cut through the shell along the back of the prawns and remove the shells. Rinse to remove the veins and pat dry with paper towels.
02 - Add the prawns into a large bowl and mix with 1 tablespoon olive oil, lemon juice, minced garlic, cajun spice, Italian seasoning, and paprika. Toss to coat evenly. Cover with cling wrap and refrigerate for 15-30 minutes.
03 - Thread the marinated prawns onto skewers, placing 4 prawns on each skewer.
04 - Lightly brush the grill pan with olive oil. Preheat the grill over medium-high heat for 3 minutes until the oil starts sizzling and shimmering.
05 - Place the skewers evenly on the grill pan and cook for 3-4 minutes per side until the prawns are completely orange. Brush the olive oil and parsley mixture over the prawns during grilling.
06 - Transfer the skewers to a plate and serve warm with lemon wedges. Optionally sprinkle with extra parsley before serving.

# Notes:

01 - For optimal marinade results, limit marination time to a maximum of 30 minutes as the lemon juice can start to cook the prawns.
02 - This recipe yields approximately 6 skewers. Double or triple the recipe for larger gatherings.
03 - Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
