Cajun Chicken with Bell Peppers (Printable Version)

Tender chicken baked with Cajun spice, bell peppers, and creamy cheese makes for a hearty one-pan dinner.

# Ingredients:

→ Cajun Seasoning

01 - 1 teaspoon paprika
02 - 0.25 teaspoon cayenne pepper
03 - 0.25 teaspoon dried oregano
04 - 0.25 teaspoon dried thyme
05 - 0.25 teaspoon salt

→ Main Ingredients

06 - 2 small bell peppers, thinly sliced
07 - 4 small chicken breasts
08 - 4 cloves garlic, minced
09 - 170 grams cream cheese, cold, sliced
10 - 60 grams cheddar cheese, shredded

# Steps:

01 - In a small bowl, combine paprika, cayenne pepper, oregano, thyme, and salt. Mix thoroughly to create the seasoning blend.
02 - Preheat the oven to 190°C.
03 - Spread the thinly sliced bell peppers evenly on the base of a large casserole dish.
04 - Place the chicken breasts on top of the peppers so the peppers cook beneath.
05 - Generously sprinkle the Cajun seasoning over both sides of the chicken breasts. Top evenly with minced garlic.
06 - Place two slices of cream cheese atop each chicken breast. Sprinkle shredded cheddar cheese over all.
07 - Bake uncovered in the preheated oven for 20 to 30 minutes until the chicken is fully cooked and juices run clear.
08 - Broil for an additional 2 minutes for a golden top, if desired.
09 - To plate, remove bell peppers from beneath the chicken and distribute around and over the chicken breasts.

# Notes:

01 - Cooking time may vary depending on the thickness of chicken breasts.
02 - Store any leftovers in an airtight container in the refrigerator for up to three days.
