Zoodles with Summer Vegetables (Printable Version)

Zucchini noodles, corn, tomatoes, and mint come together for a delicious, market-fresh summer meal.

# Ingredients:

01 - 2 tablespoons extra-virgin olive oil
02 - 1 red onion, thinly sliced
03 - 12 mini peppers
04 - 4 zucchini, spiralized into noodles
05 - 1.5 cups cherry tomatoes, halved
06 - 1 cup corn kernels, fresh or canned
07 - Salt, to taste
08 - Freshly ground black pepper, to taste
09 - 1/3 cup fresh mint, chopped

# Steps:

01 - Heat the extra-virgin olive oil in a large sauté pan over medium heat. Add thinly sliced red onion and cook, stirring occasionally, until softened, about 4 to 5 minutes.
02 - Add mini peppers, zucchini noodles, and halved cherry tomatoes to the pan. Sauté until vegetables are just tender, approximately 4 to 5 minutes, stirring frequently.
03 - Add corn kernels and toss gently until evenly combined. Season with salt and freshly ground black pepper to taste.
04 - Serve the vegetable mixture warm, garnished with chopped fresh mint.
