Sweet and Sour Meatballs (Printable Version)

Juicy meatballs tossed with bell peppers, onions and pineapple in a homemade sweet and sour sauce - perfect with steamed rice.

# Ingredients:

→ Meatballs

01 - 1 pound ground beef
02 - ½ cup breadcrumbs
03 - 1 large egg
04 - 1 tablespoon soy sauce
05 - 1 tablespoon Worcestershire sauce
06 - ½ teaspoon garlic powder
07 - 2 tablespoons green onions, finely chopped
08 - ½ teaspoon salt
09 - ¼ teaspoon ground black pepper
10 - cooking oil spray

11 - 1 tablespoon vegetable oil
12 - 1 medium orange, yellow, or red bell pepper, cut into 1-inch pieces
13 - 1 medium green bell pepper, cut into 1-inch pieces
14 - 1 small onion, cut into 1-inch pieces
15 - 1 cup pineapple, canned or fresh, cut into 1-inch pieces
16 - 1 cup sweet and sour sauce, homemade or store-bought
17 - 1 tablespoon green onions, finely chopped
18 - 1 teaspoon white sesame seeds (for garnish)

# Steps:

01 - In a large mixing bowl, combine ground beef with breadcrumbs, egg, soy sauce, Worcestershire sauce, garlic powder, green onions, salt, and pepper. Mix well until evenly combined. Cover and set aside to marinate for at least 20 minutes.
02 - Preheat oven to 400°F. Line a half sheet baking pan with parchment paper.
03 - Take 2 spoonfuls of the beef mixture at a time and roll into meatballs. Transfer meatballs onto the parchment-lined sheet and lightly coat with cooking oil spray. Bake for 15 minutes until fully cooked through and the internal temperature reaches 165°F. Alternatively, deep fry for 5-7 minutes or air fry at 350°F for 12-14 minutes. Set aside on a plate after cooking.
04 - Heat oil in a large skillet over medium-high heat until the oil sizzles, about 1 minute. Add bell peppers, onion, and pineapple, then sauté until tender, about 3-4 minutes.
05 - Add cooked meatballs and sweet and sour sauce to the skillet. Toss well and cook until the sauce simmers, about 2-3 minutes.
06 - Garnish with green onions and sesame seeds. Serve warm with steamed rice.

01 - Allow sweet and sour meatballs to cool before storing in an airtight container in the refrigerator for 3-4 days.
02 - For meal prep, pair meatballs with steamed rice in containers for 3-4 days of lunches.
03 - Reheat meatballs on the stovetop in a covered pan, in a steamer, or in a microwave.
