Sweet Chili Chicken Grilled Cheese (Printable Version)

Golden grilled sandwich with bulgogi chicken, melted cheese, sweet chili, and fresh herbs.

# Ingredients:

01 - 1 tablespoon vegetable oil
02 - 1 small onion, thinly sliced
03 - 1 tablespoon salted butter, softened
04 - 2 slices bread
05 - 60 grams cheddar cheese, shredded or 1 slice, at room temperature
06 - 60 grams monterey jack cheese, shredded or 1 slice, at room temperature
07 - 60 grams cooked chicken or orange chicken bulgogi, sliced or shredded, kept warm
08 - 2 tablespoons sweet chili sauce
09 - 1 teaspoon toasted sesame seeds
10 - 1 tablespoon fresh basil, loosely packed and torn
11 - 1 tablespoon fresh cilantro, loosely packed and torn

# Steps:

01 - Heat the oil in a frying pan over medium-high heat. Add the sliced onions and cook until they are golden and caramelised, about 7 to 10 minutes, stirring occasionally.
02 - Spread butter evenly on one side of each bread slice. Place one slice buttered side down in the pan. Sprinkle half of the cheddar and monterey jack cheese on top, then layer with caramelised onions, chicken, sweet chili sauce, toasted sesame seeds, basil, and cilantro. Cover with the remaining cheese and top with the second bread slice, buttered side facing up.
03 - Grill the assembled sandwich in a preheated pan over medium heat until both sides are golden brown and the cheese is fully melted, about 2 to 4 minutes per side. Press gently with a spatula for even browning.
04 - Remove from the pan, allow to cool slightly, then slice and serve warm.

# Notes:

01 - For a crispier crust, use a heavy pan or place a weight on the sandwich while grilling.
