Spicy Chili Garlic Noodles (Printable Version)

Spicy, garlicky noodles tossed in a bold, umami-packed sauce. Fast, easy, and full of flavor.

# Ingredients:

→ Noodles and Sauce

01 - 8 oz Thai medium rice noodles
02 - 2 tbsp avocado oil, divided
03 - 1 shallot, finely chopped
04 - 6 garlic cloves, minced
05 - 1 tsp red pepper flakes, or to taste
06 - 3 tbsp tamari sauce or soy sauce
07 - 1 tbsp brown sugar or coconut sugar
08 - 1 tbsp gochujang, or to taste

→ Optional Garnishes

09 - 2 green onions, thinly sliced
10 - 1 tbsp sesame seeds

→ Optional Roasted Bok Choy

11 - 2 heads baby bok choy, halved
12 - 1 tbsp avocado oil
13 - Salt and pepper, to taste

→ Optional Soft-Boiled Eggs

14 - 4 large eggs
15 - 1 tbsp vinegar
16 - 1 tsp sea salt

# Steps:

01 - Preheat oven to 400°F (200°C). Place bok choy halves on a baking sheet, toss with avocado oil, salt, and pepper. Roast for 15 minutes, flipping halfway through.
02 - Bring water to a boil in a saucepan, add vinegar and salt. Gently lower eggs in and simmer for 6 minutes. Transfer to an ice bath for 5 minutes, then peel and set aside.
03 - Boil a large pot of water and cook noodles according to package instructions. Drain and rinse with cold water to stop the cooking process.
04 - Heat 1 tbsp avocado oil in a large skillet over medium heat. Add shallots and sauté for 3–4 minutes until softened.
05 - Stir in garlic and red pepper flakes, sauté for 1 minute until fragrant.
06 - Add remaining 1 tbsp avocado oil, tamari, brown sugar, and gochujang to the skillet. Stir to combine and simmer for 1–2 minutes.
07 - Add cooked noodles to the skillet and toss until evenly coated and heated through.
08 - Serve warm, garnished with green onions and sesame seeds. Top with bok choy and/or soft-boiled eggs if using.

# Notes:

01 - Adjust spice level by increasing or decreasing red pepper flakes and gochujang.
02 - To keep the dish vegan, omit the eggs and use tofu or another plant-based protein.
03 - Ensure tamari and gochujang are certified gluten-free for dietary compliance.
04 - Rice noodles absorb sauce flavors well; they are ideal for this preparation.
05 - Most ingredients are available at Asian markets or well-stocked grocery stores.
