Sesame Chicken Cabbage Crunch (Print-Friendly Version)

Bright, crunchy cabbage salad with sesame chicken, fresh vegetables, and a flavorful ginger dressing for a satisfying meal.

# What You Need:

→ For the chicken

01 - Grilled Sesame Chicken

→ For the salad

02 - 4 cups shredded green cabbage
03 - 2 cups shredded red cabbage
04 - 1/2 cup diced green onion
05 - 3/4 cup freshly diced cilantro
06 - 1 cup shredded carrots (bagged or cut into matchsticks for excellent crunch)
07 - 1 red bell pepper, thinly julienned
08 - 1 jalapeno, seeded and diced

→ For the dressing

09 - 1 batch Sesame Ginger Dressing

→ For serving

10 - 1/3 cup toasted sliced almonds
11 - 1/3 cup roasted cashew halves
12 - Sesame seeds
13 - Extra cilantro
14 - Extra green onion
15 - A few jalapeno slices
16 - Optional: Crispy wonton strips

# How to Make It:

01 - Marinate the chicken using this grilled sesame chicken recipe.
02 - Make the sesame ginger dressing. Set aside.
03 - In a large bowl, add the green and red cabbage, green onion, cilantro, carrots, bell pepper, and jalapeno. Pour dressing all over the salad and toss to combine and coat all the veggies. Cover and set aside while you bake or grill your chicken according to the recipe.
04 - Add salad to a large platter. Garnish with toasted sliced almonds, cashews, extra cilantro, a sprinkle of sesame seeds, a few jalapeno slices, and additional chopped green onion, if desired. Optionally, add crispy wonton strips. Serves 4 as a hearty main dish or 6 as a side dish.

01 - This salad is just as fabulous without the chicken. Feel free to omit or replace with tofu or a can of rinsed and drained chickpeas.
