Heat olive oil in a cast-iron skillet over medium heat. Slice the cooked sausage into coins and add to the skillet. Cook for 5 minutes on one side, flip, and continue cooking for 3 additional minutes. Remove sausage from the skillet and set aside.

To the same skillet, add diced red bell pepper. Cook for about 4 minutes on medium heat until slightly softened, adding reserved sausage oil if needed. Remove cooked pepper and set aside with the sausage.

Add sliced zucchini to the empty skillet, cooking for approximately 3 minutes over medium heat. Add reserved sausage oil if needed to prevent sticking.

Using a knife, slice cooked corn kernels off the cob if not already prepared.

Return the cooked sausage, bell pepper, zucchini, and corn kernels to the skillet. Mix well, add any reserved oil, and sprinkle with chili powder. Reheat gently over low heat, stirring to combine.

Remove from heat and garnish with chopped fresh cilantro. Adjust seasoning with salt if necessary before serving.
