Mediterranean Cod (Printable Version)

Flaky cod with tomatoes, olives, and herbs - a light weeknight dinner that's ready in 25 minutes.

# Ingredients:

01 - 1.5 pounds cod fillets (about four 6-ounce fillets)
02 - 1 pint cherry tomatoes
03 - 1/2 cup Kalamata olives, pitted and halved
04 - 1/2 red onion, thinly sliced
05 - 2 cloves garlic, minced
06 - 1 tablespoon fresh oregano, chopped
07 - 1 tablespoon fresh parsley, chopped
08 - 1 lemon (half juiced and half sliced into thin rounds)
09 - 2 tablespoons olive oil
10 - Salt and black pepper, to taste

# Steps:

01 - Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with olive oil.
02 - In the baking dish, combine cherry tomatoes, halved Kalamata olives, thinly sliced red onion, and minced garlic. Drizzle with 1 tablespoon of olive oil, and season with salt and pepper. Toss to coat.
03 - Place the cod fillets on top of the vegetable mixture, spaced out evenly.
04 - Drizzle the remaining tablespoon of olive oil over the cod fillets. Squeeze the juice of half a lemon over the fish, and season generously with salt and black pepper. Sprinkle chopped fresh oregano and parsley over the cod and vegetables. Arrange thin lemon slices on top of the cod fillets.
05 - Bake for 15-20 minutes, or until the cod is cooked through and flakes easily with a fork.
06 - Serve hot with the cooked vegetables and lemon slices.
