Italian Chopped Salad (Printable Version)

01 - 1 head romaine lettuce, roughly chopped
02 - 1 cup chopped radicchio lettuce
03 - 8 ounces fresh mozzarella, cut into 1/4-inch cubes
04 - 4 ounces dry Italian salami, cut into matchsticks
05 - 1 (15-ounce) can chickpeas, rinsed and drained
06 - 1 (2.25-ounce) can sliced black olives, rinsed and drained
07 - 1 yellow bell pepper, diced
08 - 1/2 English cucumber, diced
09 - 6 pepperoncini, sliced
10 - 1 cup halved grape tomatoes
11 - 1/3 cup chopped red onion
12 - 1/2 cup shaved Parmesan

→ Dressing Ingredients

13 - 1/2 cup extra virgin olive oil
14 - 3 tablespoons red wine vinegar
15 - 2 teaspoons Dijon mustard
16 - 1 clove garlic, grated
17 - 3/4 teaspoon dried oregano
18 - 1/8 teaspoon crushed red pepper flakes
19 - Kosher salt, to taste
20 - Freshly ground black pepper, to taste

# Steps:

01 - Place romaine and radicchio lettuce in a large bowl; top with mozzarella, salami, chickpeas, olives, bell pepper, cucumber, pepperoncini, tomatoes, and red onion.
02 - In a medium bowl, whisk together olive oil, red wine vinegar, Dijon mustard, garlic, oregano, and red pepper flakes. Season with salt and black pepper to taste.
03 - Pour the dressing on top of the salad and gently toss to combine. Top with shaved Parmesan and serve immediately.
