01 - 1 medium head of cabbage, chopped
02 - 1 lb ground beef or turkey
03 - 1 medium onion, diced
04 - 2 cloves garlic, minced
05 - 2 large carrots, diced
06 - 1 bell pepper (any color), diced
07 - 1 can (400g) diced tomatoes, undrained
08 - 1 liter beef or vegetable broth
09 - 500ml water
10 - 1 teaspoon dried thyme
11 - 1 teaspoon paprika
12 - 1 bay leaf
13 - Salt and pepper to taste
14 - 2 tablespoons olive oil

# Steps:

01 - In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing for 3-5 minutes until onions become translucent and fragrant.
02 - Add ground beef or turkey to the pot. Cook for 5-7 minutes, breaking it apart with a spoon until nicely browned. Drain excess fat if necessary.
03 - Stir in diced carrots and bell pepper. Cook for 3-4 minutes until they begin to soften.
04 - Add chopped cabbage, diced tomatoes with juice, broth, and water into the pot. Mix thoroughly to combine all ingredients.
05 - Add dried thyme, paprika, bay leaf, salt, and pepper. Stir well and bring the mixture to a boil.
06 - Reduce heat to low, cover the pot, and simmer for 30-40 minutes, stirring occasionally, until cabbage becomes tender.
07 - Remove bay leaf before serving. Taste and adjust seasoning with additional salt and pepper if needed.
08 - Ladle hot soup into bowls. Garnish with fresh herbs if desired.
