In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing for 3-5 minutes until onions become translucent and fragrant.

Add ground beef or turkey to the pot. Cook for 5-7 minutes, breaking it apart with a spoon until nicely browned. Drain excess fat if necessary.

Stir in diced carrots and bell pepper. Cook for 3-4 minutes until they begin to soften.

Add chopped cabbage, diced tomatoes with juice, broth, and water into the pot. Mix thoroughly to combine all ingredients.

Add dried thyme, paprika, bay leaf, salt, and pepper. Stir well and bring the mixture to a boil.

Reduce heat to low, cover the pot, and simmer for 30-40 minutes, stirring occasionally, until cabbage becomes tender.

Remove bay leaf before serving. Taste and adjust seasoning with additional salt and pepper if needed.
