Peel and dice the sweet potatoes into uniform cubes. Dice the onion and mince the garlic. Chop the parsley and set aside.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the sweet potatoes, season with salt and pepper, and sauté for 10 minutes until softened and slightly golden.

Push sweet potatoes to one side or transfer to a plate. Add remaining oil, then cook onions for 3–4 minutes until translucent. Stir in garlic and cook for 30 seconds until fragrant.

Add ground turkey to the skillet. Break apart with a spatula, season with paprika, salt, and pepper. Cook for 6–8 minutes until fully browned and cooked through.

Return sweet potatoes to the skillet if removed. Stir everything together and cook for an additional 2–3 minutes to combine flavors.

Turn off heat, sprinkle with chopped parsley, and stir to distribute. Adjust seasoning to taste and serve warm.
