Grilled Sweet Potatoes with Herbs (Printable Version)

Sweet potatoes grilled and topped with herbed yogurt sauce, ideal for a vibrant side at any meal.

# Ingredients:

→ Sweet Potatoes

01 - 3 medium sweet potatoes, peeled and cut into 4 cm thick wedges
02 - 2 tablespoons extra-virgin olive oil
03 - 1 ½ teaspoons kosher salt, divided

→ Yogurt Herb Dressing

04 - 180 ml Greek yogurt
05 - 4 green onions, ends trimmed, roughly chopped
06 - 15 g fresh dill, plus more for serving
07 - 2 garlic cloves, smashed
08 - 10 large fresh basil leaves
09 - 2 tablespoons fresh lemon juice (from 1 lemon)

# Steps:

01 - Preheat the grill to medium-high heat.
02 - Arrange sweet potato wedges on a large rimmed baking tray. Drizzle with olive oil and sprinkle evenly with 1 teaspoon of salt. Toss to coat thoroughly.
03 - Place sweet potato wedges on the grill, cut side down. Grill, turning every 2-3 minutes, until fork tender and lightly charred, about 15 minutes.
04 - While potatoes grill, combine Greek yogurt, green onions, dill, garlic, basil, lemon juice, and remaining ½ teaspoon salt in a blender or food processor. Blend until smooth, about 1-3 minutes.
05 - Transfer grilled sweet potatoes to a serving platter. Drizzle with yogurt herb dressing and garnish with additional fresh dill. Serve family style.
