Grilled Nectarine Burrata Prosciutto (Print-Friendly Version)

01 - 4 ripe nectarines, pitted and quartered
02 - 8 slices prosciutto
03 - 8 ounces burrata cheese, torn into pieces
04 - 4 ounces cherry tomatoes, halved
05 - 2 heirloom tomatoes, halved and cut into eighths
06 - 0.5 cup fresh cherries, pitted and halved
07 - 0.5 cup mixed baby spring greens
08 - Finishing salt
09 - Freshly ground black pepper
10 - Grilled baguette, to serve

→ Lemon Herb Vinaigrette

11 - 2 tablespoons fresh lemon juice
12 - 1 tablespoon white wine vinegar
13 - 1 tablespoon lemon zest
14 - 1 tablespoon fresh oregano, roughly minced
15 - 1 tablespoon fresh mint, roughly minced
16 - 1 tablespoon fresh lemon thyme leaves
17 - 0.5 cup extra virgin olive oil
18 - Pinch of salt
19 - Freshly ground black pepper, as desired

# How to Make It:

01 - Preheat a grill or grill pan over medium-high heat. Slice nectarine quarters into eighths and lightly brush with a small amount of olive oil.
02 - Arrange nectarine slices on the preheated grill. Cook for 2 to 3 minutes per side until distinct grill marks appear and fruit is slightly softened. Remove and allow to cool.
03 - In a small bowl, vigorously whisk together lemon juice, white wine vinegar, lemon zest, oregano, mint, lemon thyme, extra virgin olive oil, a pinch of salt, and freshly ground black pepper until emulsified. Set aside.
04 - In a large mixing bowl, gently toss the baby greens, cherry tomatoes, heirloom tomato segments, and cherries with the vinaigrette until evenly coated.
05 - Top the salad mixture with grilled nectarines, torn burrata cheese, and prosciutto slices. Sprinkle with any remaining fresh herbs, finishing salt, and additional black pepper. Serve immediately with grilled baguette on the side.
