Greek Chicken Gyros with Tzatziki (Printable Version)

# Ingredients:

→ Chicken Souvlaki Marinade

01 - 1/4 cup olive oil
02 - 3 cloves garlic, crushed
03 - Juice of 1 lemon
04 - 3 tablespoons fresh parsley, chopped
05 - 1 1/2 tablespoons dried oregano
06 - 1/2 tablespoon dried mint
07 - 1 teaspoon salt
08 - 1/2 teaspoon ground black pepper
09 - 3 bay leaves

→ Chicken

10 - 2 pounds chicken breast, cut into 1.5-inch cubes
11 - 1 tablespoon olive oil

→ Tzatziki Sauce

12 - 1/2 large cucumber, unpeeled
13 - 1 cup plain Greek yogurt
14 - 2 cloves garlic, pressed or finely minced
15 - 1/2 tablespoon extra virgin olive oil
16 - 2 teaspoons freshly squeezed lemon juice
17 - 1 1/2 tablespoons fresh dill, chopped
18 - 1/4 teaspoon salt
19 - Pinch of ground black pepper

→ Toppings

20 - 1 1/2 cups romaine lettuce, chopped
21 - 1/2 cup cherry tomatoes, quartered
22 - 1/2 cup red onion, chopped
23 - 1/2 cup cucumber, sliced and chopped into quarters
24 - 2 tablespoons feta cheese, crumbled
25 - Salt, to taste
26 - Ground black pepper, to taste

→ Gyros

27 - 6-8 pita breads

# Steps:

01 - Combine all marinade ingredients in a large resealable bag. Add chicken cubes, press air out of the bag, seal tightly, and coat chicken in marinade. Refrigerate for at least 1 hour or overnight.
02 - Grate cucumber and drain excess liquid. In a medium bowl, combine drained cucumber, yogurt, garlic, olive oil, lemon juice, dill, salt, and pepper. Stir until smooth and refrigerate for 1 hour.
03 - In a medium bowl, combine romaine lettuce, tomatoes, red onion, cucumber, feta cheese, salt, and pepper. Toss well.
04 - Thread chicken onto skewers or grill individual pieces. Heat grill or grill pan over medium-high heat and lightly brush with olive oil. Cook chicken for 7 minutes on each side or until the internal temperature reaches 75°C (165°F).
05 - Warm pitas on the grill for 1-2 minutes on each side. Place a line of salad toppings in the center of each pita, top with grilled chicken, and a generous scoop of tzatziki sauce. Fold and secure with parchment paper, if desired.

# Notes:

01 - Marinate chicken for at least 1 hour to enhance flavor and juiciness, or overnight for the best results.
02 - Use a digital meat thermometer when grilling to ensure the chicken is cooked to 75°C (165°F).
03 - Serve with gyros wrapped in parchment paper to keep the fillings intact.
