Greek Chicken Bowls with Rice (Printable Version)

# Ingredients:

→ Greek Chicken & Marinade

01 - 680 g fresh chicken breast, sliced in half for thinner pieces
02 - 3 tablespoons freshly squeezed lemon juice
03 - 1 tablespoon white wine vinegar
04 - 2 tablespoons dried oregano
05 - 1 teaspoon garlic powder
06 - 0.5 teaspoon dried thyme
07 - 1 teaspoon kosher salt
08 - 0.5 teaspoon freshly ground black pepper
09 - 2 teaspoons olive oil, for cooking

→ Greek Cucumber Salad

10 - 2 cups chopped English cucumber or baby cucumber
11 - 4 Roma tomatoes, flesh removed and chopped
12 - 23 kalamata olives, halved
13 - 0.25 small red onion, finely diced
14 - 0.5 cup crumbled feta cheese
15 - 1 tablespoon olive oil
16 - 2 tablespoons white wine vinegar
17 - 1 teaspoon dried oregano
18 - 1 teaspoon garlic powder
19 - 0.25 teaspoon dried dill weed
20 - 1 teaspoon kosher salt
21 - Freshly ground black pepper, to taste

→ Base

22 - 2 cups cooked white rice, seasoned with salt and pepper

# Steps:

01 - In a large resealable bag, combine chicken breasts with lemon juice, white wine vinegar, oregano, garlic powder, thyme, kosher salt, and black pepper. Seal the bag and massage marinade into chicken. Refrigerate for at least 30 minutes, up to 8 hours.
02 - Remove chicken from marinade, discarding excess. Pat lightly with paper towel to remove extra marinade. Heat a large skillet over medium heat and add 1 teaspoon of olive oil. Sear chicken for 4–5 minutes per side until golden and internal temperature reaches 74°C. Rest chicken for 8–10 minutes, then slice into strips.
03 - In a mixing bowl, add cucumber, tomatoes, olives, red onion, feta cheese, olive oil, white wine vinegar, oregano, garlic powder, dill, kosher salt, and pepper. Toss well to combine.
04 - Divide 125 g cooked rice into each serving bowl. Top with 240 ml cucumber salad and 113 g sliced chicken. Garnish with extra feta if desired. Serve immediately or refrigerate components separately for meal prep.

# Notes:

01 - For optimal flavour, marinate chicken for several hours. Combine chicken and rice for storage, keeping salad separate to maintain texture.
