Preheat oven to 220°C. Grease a large baking sheet and cut carrots into diagonal pieces of equal size.

Melt butter in a saucepan over medium heat. Add minced garlic and cook for 3 minutes until lightly golden, stirring occasionally. Remove from heat and blend in honey until smooth.

Place carrots in a mixing bowl. Pour prepared garlic-honey butter over carrots, season with salt and pepper, and toss to coat evenly.

Arrange glazed carrots in a single layer on the prepared baking sheet. Roast in the oven for 22–25 minutes, stirring once halfway, until tender and caramelised at the edges.

Taste and adjust seasonings as needed. Transfer roasted carrots to a serving dish and garnish with chopped parsley. Serve warm.
