Garlic Shrimp Stir Fry (Printable Version)

Saucy garlic shrimp with bell peppers in a savory sauce, ready in 15 minutes and perfect for quick weeknight meals.

# Ingredients:

→ Main

01 - 1 tablespoon vegetable oil
02 - 1 pound white shrimp, peeled and deveined
03 - ½ tablespoon ginger, freshly grated
04 - 1 tablespoon garlic, chopped
05 - 1 medium red bell pepper, sliced
06 - 1 tablespoon green onions, finely chopped
07 - crushed peanuts (optional for serving)

→ Sauce

08 - 2 tablespoons soy sauce
09 - 1 tablespoon Shaoxing wine (optional)
10 - 2 tablespoons ketchup
11 - ¼ cup chicken broth (or water)
12 - 1 tablespoon cornstarch

# Steps:

01 - In a small mixing bowl, whisk together soy sauce, Shaoxing wine, ketchup, chicken broth (or water), and cornstarch until smooth. Set aside.
02 - Heat oil in a large skillet over medium-high heat until sizzling, about 1 minute. Add shrimp and sauté until pink on both sides, about 4-6 minutes.
03 - Add ginger and garlic to the skillet and cook until fragrant, about 1 minute. Add the prepared sauce and bell pepper. Toss well and cook until the sauce simmers and thickens to a desired consistency, about 2-3 minutes.
04 - Stir in green onions and top with crushed peanuts if desired. Serve immediately with steamed rice.

# Notes:

01 - Keep garlic shrimp stir fry in an airtight container for up to 3 days. For meal prep, store individual portions alongside steamed rice for easy reheating.
02 - When reheating, avoid overcooking shrimp. Microwave on medium heat in 20-second increments or heat on the stovetop with a splash of water if the sauce has thickened.
