# What You Need:

→ Salad

01 - 2 medium apples, thinly sliced or julienned (Granny Smith or Honeycrisp recommended)
02 - 2 large carrots, peeled and grated or julienned
03 - 1/4 small red onion, thinly sliced
04 - 1/4 cup raisins or dried cranberries
05 - 1/4 cup toasted nuts or seeds (such as almonds, walnuts, or sunflower seeds)

→ Creamy Citrus Dressing

06 - 1/4 cup Greek yogurt
07 - 2 tablespoons fresh orange juice
08 - 1 tablespoon lemon juice
09 - 1 tablespoon honey
10 - 1 tablespoon olive oil
11 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - In a small bowl, whisk together Greek yogurt, orange juice, lemon juice, honey, and olive oil. Season with salt and pepper to taste. Adjust consistency with a splash of water or extra juice if desired.
02 - Peel and julienne or grate the carrots. Slice the apples into thin matchsticks or wedges. Thinly slice the red onion. Toast nuts or seeds in a dry pan over medium heat until golden and fragrant.
03 - In a large bowl, mix together the grated carrots, sliced apples, red onion, dried cranberries or raisins, and toasted nuts or seeds.
04 - Drizzle the prepared dressing over the salad and toss gently to evenly coat all ingredients.
05 - Serve immediately for optimal crunch or refrigerate briefly to let flavors meld. Enjoy chilled.

# Important Notes:

01 - Add a pinch of chili flakes or cayenne pepper to the dressing for a spicy kick.
02 - To keep apples from browning if preparing ahead, toss them with a little lemon juice before adding to the salad.
03 - Vegan option: Replace Greek yogurt with coconut or cashew yogurt and substitute honey with maple syrup.
