Crock Pot Fiesta Chicken (Print-Friendly Version)

01 - 4 boneless, skinless chicken breasts
02 - 1 packet dry ranch dressing mix
03 - 1 teaspoon onion powder
04 - 1 teaspoon ground black pepper
05 - 1 can (284 g) Rotel diced tomatoes and green chilies, undrained
06 - 1 can (425 g) whole kernel corn, drained
07 - 1 can (425 g) black beans, drained and rinsed
08 - 225 g plain cream cheese block
09 - 2 limes, freshly squeezed
10 - 120 ml chicken broth

# How to Make It:

01 - Arrange chicken breasts in the base of the slow cooker. Top with black beans, corn, and Rotel tomatoes.
02 - Evenly sprinkle onion powder, ranch dressing mix, and black pepper over the contents.
03 - Pour freshly squeezed lime juice and chicken broth over the ingredients. Position the cream cheese block on top.
04 - Cover with the lid. Cook on high for 3–4 hours or on low for 5–6 hours, until the chicken reaches an internal temperature of 74°C.
05 - Remove the cooked chicken breasts, shred them using two forks, and return the meat to the slow cooker.
06 - Mix thoroughly until the cream cheese is fully incorporated. Serve hot as desired.
