# Ingredients:

01 - 1 pound farfalle pasta
02 - 2/3 cup reserved starchy pasta water

04 - 8 ounces burrata cheese
05 - 1/2 cup finely grated parmesan cheese

06 - 1 sweet onion, diced
07 - 4 garlic cloves, minced
08 - 1 pound asparagus spears, cut into thirds

09 - 1 tablespoon olive oil
10 - Kosher salt, to taste
11 - Freshly ground black pepper, to taste
12 - Crushed red pepper flakes, for serving

# Steps:

01 - Bring a large pot of salted water to a boil. Add farfalle pasta and cook according to package instructions until al dente. Reserve 1 cup of the starchy pasta water before draining.
02 - In a large skillet over medium heat, heat olive oil. Add Italian sausage, season with salt and pepper, and cook until browned and crispy, breaking it apart with a spatula. Transfer sausage to a plate.
03 - In the same skillet, add diced onion, minced garlic, and a pinch of salt and pepper. Sauté for 5 minutes, stirring frequently, until softened.
04 - Add asparagus spears to the skillet and cook, stirring often, until tender, about 6 to 8 minutes. Season with additional salt and pepper if needed.
05 - Return the cooked sausage to the skillet. Add the drained farfalle and 2/3 cup of the reserved pasta water. Toss to combine evenly.
06 - Stir in the grated parmesan until melted. Remove the skillet from heat, tear the burrata into pieces, and gently fold it into the pasta. Sprinkle with crushed red pepper flakes before serving.
