Creamy Tortellini Sausage Soup (Printable Version)

# Ingredients:

01 - 1 lb Italian sausage (mild or spicy)
02 - 1 small yellow onion, diced
03 - 3 cloves garlic, minced
04 - 4 cups low-sodium chicken broth
05 - 1 tsp Italian seasoning
06 - Salt and freshly ground black pepper, to taste
07 - 9 oz cheese tortellini (refrigerated or frozen)
08 - 1 cup heavy cream
09 - 2 cups fresh spinach, roughly chopped
10 - 1/4 cup grated Parmesan cheese (optional, for topping)
11 - 1 tbsp olive oil (if needed for sautéing)

# Steps:

01 - In a large pot, cook the sausage over medium heat until browned and cooked through. Remove and set aside.
02 - In the same pot, sauté the diced onion until soft (add oil if needed). Add garlic and cook for 30 seconds.
03 - Pour in the chicken broth and stir to deglaze the pot. Add Italian seasoning, salt, and pepper.
04 - Bring the mixture to a simmer and add the tortellini. Cook for 5–7 minutes, or until tortellini is tender.
05 - Reduce heat and stir in the heavy cream. Add fresh spinach and let it wilt in the hot soup.
06 - Return the sausage to the pot and stir to combine. Taste and adjust seasoning as needed.
