Tender corned beef with cabbage, carrots, and crispy roasted potatoes—perfect for cozy dinners or holiday spreads.

# Ingredients:

→ Main Components

01 - 4 lb flat-cut corned beef brisket with spice packet
02 - 1 large green cabbage, core removed and sliced
03 - 5 large carrots, peeled and cut into chunks
04 - 1 large onion, sliced thick
05 - 4 garlic cloves, smashed
06 - 1 tablespoon whole peppercorns
07 - 3 bay leaves
08 - 3 sprigs fresh thyme or 1 teaspoon dried thyme
09 - 3 tablespoons whole grain mustard
10 - 4 cups low-sodium beef broth
11 - 2 tablespoons canola or avocado oil
12 - 3 tablespoons unsalted butter
13 - 1 tablespoon kosher salt, or to taste

→ To Serve

14 - Roasted red potatoes, cooked separately
15 - Prepared horseradish sauce
16 - Chopped fresh parsley or chives

# Steps:

01 - Heat oil in a large skillet over high heat. Place brisket fat-side down and sear without moving until browned. Flip and repeat on the other side. Remove from pan.
02 - Pour beef broth and mustard into the same pan. Scrape up browned bits, simmer briefly, then pour over the brisket in the slow cooker.
03 - Scatter sliced onion, smashed garlic, peppercorns, bay leaves, thyme, and spice packet (if included) around the brisket in the cooker.
04 - Cover and cook on low heat for 6 to 7 hours until the brisket is fork-tender.
05 - Place carrot chunks over the brisket and cook for an additional 1 to 2 hours until tender.
06 - Melt butter in a large pan over medium heat. Add sliced cabbage, season with salt, and sauté until just softened and vibrant.
07 - Layer sautéed cabbage over other ingredients and cook on low for 30 to 60 minutes more to absorb flavors.
08 - Roast red potatoes in the oven at 425°F until golden and crispy. Do not add to the slow cooker.
09 - Slice brisket against the grain. Arrange with cabbage, carrots, and roasted potatoes. Garnish with herbs and serve with horseradish sauce.

# Notes:

01 - Brisket slices best after resting for 10–15 minutes.
02 - Carrots should be added later in the cooking process to maintain texture.
03 - Roasting potatoes separately ensures a crispy finish.
04 - Cabbage sautéed in butter before adding to the cooker improves flavor and texture.
