# Ingredients:

→ Dressing

01 - Zest and juice of 1 lemon
02 - 0.5 teaspoon Dijon mustard
03 - 0.5 teaspoon garlic powder
04 - 80 millilitres olive oil
05 - Salt, to taste
06 - Freshly ground black pepper, to taste

→ Salad

07 - 3 medium zucchini, spiralized into noodles
08 - 1 bunch radishes, thinly sliced
09 - 1 tablespoon chopped fresh thyme

# Steps:

01 - In a small bowl, whisk together the lemon zest, lemon juice, Dijon mustard, and garlic powder until well combined.
02 - Gradually drizzle in the olive oil while continuously whisking to create a smooth emulsion. Season to taste with salt and freshly ground black pepper.
03 - In a large mixing bowl, toss spiralized zucchini noodles with sliced radishes.
04 - Pour the dressing over the vegetables and toss thoroughly to coat. Serve immediately, garnished with chopped fresh thyme.
