In a gallon-size resealable plastic bag or a large bowl, combine chicken and the prepared cilantro marinade; marinate for at least 2 hours or overnight, turning occasionally. Drain the chicken from the marinade before cooking.

Heat the remaining 1 tablespoon of olive oil in a cast iron grill pan over medium-high heat. Working in batches, add the marinated chicken to the pan in a single layer and cook until golden brown and cooked through, with an internal temperature of 74°C (165°F), approximately 4-5 minutes per side.
