# Ingredients:

01 - 1/4 cup chopped fresh cilantro leaves
02 - 3 tablespoons extra virgin olive oil, divided
03 - 2 tablespoons freshly squeezed lime juice
04 - 1 tablespoon lime zest
05 - 2 teaspoons chili powder
06 - 1 teaspoon ground cumin
07 - 1 teaspoon kosher salt
08 - 1 teaspoon freshly ground black pepper
09 - 2 pounds boneless, skinless chicken thighs

# Steps:

01 - In a medium bowl, combine cilantro, 2 tablespoons olive oil, lime juice, lime zest, chili powder, cumin, salt, and pepper.
02 - In a gallon-size resealable plastic bag or a large bowl, combine chicken and the prepared cilantro marinade; marinate for at least 2 hours or overnight, turning occasionally. Drain the chicken from the marinade before cooking.
03 - Heat the remaining 1 tablespoon of olive oil in a cast iron grill pan over medium-high heat. Working in batches, add the marinated chicken to the pan in a single layer and cook until golden brown and cooked through, with an internal temperature of 74°C (165°F), approximately 4-5 minutes per side.
04 - Serve immediately while hot.
