# Ingredients:

→ Chicken Marinade

01 - 2 boneless, skinless chicken breasts
02 - 30 millilitres olive oil
03 - 30 millilitres freshly squeezed lime juice
04 - 15 millilitres chipotle chili powder
05 - 5 millilitres smoked paprika
06 - 5 millilitres garlic powder
07 - 5 millilitres onion powder
08 - 5 millilitres ground cumin
09 - Salt and pepper to taste

→ Burrito Assembly

10 - 4 large flour tortillas
11 - 250 millilitres cooked white or brown rice
12 - 250 millilitres drained and rinsed black beans
13 - 250 millilitres shredded cheddar or Monterey Jack cheese
14 - 250 millilitres shredded lettuce
15 - 125 millilitres diced tomatoes
16 - 125 millilitres corn kernels (optional)
17 - 60 millilitres chopped cilantro (optional)
18 - 125 millilitres chipotle ranch dressing

# Steps:

01 - In a mixing bowl, whisk together olive oil, lime juice, chipotle chili powder, smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Add chicken breasts and coat thoroughly in the marinade. Cover and refrigerate for a minimum of 20 minutes, or up to 2 hours for enhanced flavor.
02 - Preheat a grill or grill pan to medium-high heat. Grill marinated chicken breasts for 6 to 8 minutes per side, or until the internal temperature reaches 74°C. Remove from heat and allow to rest for 5 minutes, then slice into strips.
03 - Heat tortillas in a dry skillet or microwave until flexible. Ensure the black beans and rice are heated through before assembly.
04 - Lay each tortilla flat. Spread 1 to 2 tablespoons of chipotle ranch dressing in the center. Layer with rice, black beans, grilled chicken strips, shredded cheese, lettuce, diced tomatoes, and corn if using. Sprinkle chopped cilantro on top for freshness.
05 - Fold the sides of the tortilla inward and roll tightly from the bottom to form a burrito. Serve immediately or optionally grill the wrapped burrito to achieve a crisp exterior.
