# Ingredients:

01 - 150g dried wheat noodles or 300g fresh noodles
02 - ½ cup coriander, finely chopped
03 - 2 spring onions, finely chopped
04 - 1 tablespoon crispy chilli oil (optional)

→ Chilli Garlic Sauce

05 - 1 tablespoon chilli powder or flakes (adjust to taste)
06 - 4 garlic cloves, minced
07 - ½ tablespoon white sugar
08 - 3 tablespoons neutral oil (e.g., sunflower, grapeseed, canola)
09 - 1½ tablespoons soy sauce
10 - ½ tablespoon black vinegar
11 - ½ teaspoon sesame oil

# Steps:

01 - In a large heatproof bowl, combine chilli powder, minced garlic, and sugar.
02 - Heat oil in a small saucepan until very hot. Look for small ripples or light smoke formation.
03 - Carefully pour the hot oil into the chilli garlic mixture and mix well. Stir in soy sauce, black vinegar, and sesame oil. Divide the sauce into two large serving bowls.
04 - Cook the noodles according to packet instructions, approximately 3 minutes.
05 - Add the cooked noodles to the serving bowls with the prepared chilli garlic sauce. Top with coriander, spring onions, and crispy chilli oil if using.
06 - Mix thoroughly before eating and serve immediately.
