Chicken and Sausage Jambalaya (Printable Version)

A hearty Southern classic with tender chicken, smoky Andouille sausage and fluffy rice infused with rich Cajun flavors in your Instant Pot.

# Ingredients:

01 - 1 lb chicken thighs or breasts, cut into chunks
02 - 12 oz Andouille sausage, sliced
03 - 1 ½ cups long grain white rice (uncooked)
04 - 1 green bell pepper, diced
05 - 2 celery stalks, diced
06 - 1 small onion, chopped
07 - 3 cloves garlic, minced
08 - 1 (14.5 oz) can diced tomatoes, with juice
09 - 2 ½ cups chicken broth
10 - 1 ½ tbsp Cajun seasoning (adjust to taste)

11 - 1 tbsp olive oil or butter
12 - Salt and pepper to taste
13 - Sliced green onions, for garnish

# Steps:

01 - Set Instant Pot to Sauté. Add olive oil and brown the sausage slices for about 3–4 minutes. Remove and set aside.
02 - Add chicken chunks, season lightly, and sear until browned. Remove and set aside with the sausage.
03 - Sauté onion, celery, and bell pepper until softened (3–4 minutes). Add garlic and cook another 30 seconds.
04 - Deglaze the pot with a splash of broth, scraping up brown bits.
05 - Stir in diced tomatoes, Cajun seasoning, and return sausage and chicken to the pot. Add rice and pour in the remaining broth. Stir gently to combine without overmixing.
06 - Seal the lid and set to High Pressure for 7 minutes. Allow 5 minutes natural release, then quick release remaining pressure.
07 - Fluff rice gently, garnish with green onions, and serve hot.
