Cheesy Potato Burritos (Print-Friendly Version)

Ground beef, tots, and melted cheese wrapped in warm tortillas—fast, filling, and totally comforting.

# What You Need:

→ Filling

01 - 1 lb ground beef (80/20 blend)
02 - 3 cups frozen tater tots
03 - 1 cup shredded cheddar cheese
04 - 1 cup shredded Monterey Jack cheese
05 - Salt, to taste
06 - Black pepper, to taste

→ Assembly

07 - 6 large flour tortillas
08 - 1/3 cup chipotle sauce
09 - 1/2 cup sour cream
10 - 1/4 cup diced tomatoes (optional topping)
11 - 2 tablespoons chopped green onions or cilantro (optional topping)

# How to Make It:

01 - Preheat oven according to tater tot package directions. Spread tots on a baking sheet in a single layer and bake for 20–25 minutes until golden and crispy.
02 - In a skillet over medium heat, cook ground beef until browned and fully cooked, about 8 minutes. Season with salt and pepper, drain excess grease, and set aside.
03 - Let cooked tater tots cool slightly, then lightly crush into chunks. In a large bowl, mix crushed tots, ground beef, cheddar, and Monterey Jack cheese until well combined.
04 - Heat tortillas in a dry skillet for 30 seconds per side or microwave wrapped in a damp towel for 15 seconds to make them pliable.
05 - Place filling in the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream. Leave a 2-inch border around the edges.
06 - Fold in the sides, then roll tightly from the bottom. Place seam-side down in a baking dish. Sprinkle extra cheese on top if desired.
07 - Bake in the oven for a few minutes until the cheese on top melts and the burritos are heated through. Garnish with tomatoes, green onions, or cilantro if using.

# Important Notes:

01 - Avoid overfilling the tortillas to prevent tearing and ensure clean rolls.
02 - Crush tater tots gently to retain texture without turning them into mash.
03 - Warming the tortillas is essential to prevent cracking during rolling.
04 - Layer cheese both in the filling and on top for maximum meltiness.
05 - Let burritos rest briefly after baking to help set the filling before serving.
