Let cooked tater tots cool slightly, then lightly crush into chunks. In a large bowl, mix crushed tots, ground beef, cheddar, and Monterey Jack cheese until well combined.

Heat tortillas in a dry skillet for 30 seconds per side or microwave wrapped in a damp towel for 15 seconds to make them pliable.

Place filling in the center of each tortilla. Drizzle with chipotle sauce and add a dollop of sour cream. Leave a 2-inch border around the edges.

Fold in the sides, then roll tightly from the bottom. Place seam-side down in a baking dish. Sprinkle extra cheese on top if desired.
