Punch down the dough, roll it into a 1/2-inch thick rectangle, and cut into 2x2-inch squares. Place a cheese cube in each, fold corners over, and seal tightly into balls.

Bring 10 cups of water to a boil and add baking soda. Boil pretzel bites in batches for 30 seconds. Remove with slotted spoon to the prepared baking sheet.

Brush bites with beaten egg, sprinkle with coarse salt, and bake for 12–15 minutes until golden brown. Brush with melted butter after baking and serve warm.
