Preheat oven to 163°C. Grease a 23x33 cm baking pan or line with parchment paper.

In a bowl, mix graham cracker crumbs, granulated sugar, and melted butter until uniformly combined. Press mixture firmly into the base of the prepared pan to create an even layer.

In a large bowl, beat softened cream cheese and granulated sugar until smooth and creamy. Add sour cream, eggs, and vanilla extract, and continue to beat until the mixture is fully combined and homogenous.

Pour the filling over the crust and smooth the top. Bake for 35–40 minutes, until edges are set and the center is slightly jiggly. Turn off the oven and let the bars cool inside with the door ajar for 1 hour.

Remove pan from oven and refrigerate for at least 4 hours or overnight to allow bars to set completely.

Drizzle caramel sauce evenly over chilled bars. Sprinkle with sea salt if desired. Cut into squares and serve.
