Blueberry Peach Feta Salad (Printable Version)

A perfect balance of sweet fruits, crisp cucumbers, and salty feta cheese tossed in a refreshing lemon basil vinaigrette.

# Ingredients:

→ Salad

01 - 1 pint fresh blueberries
02 - 2 peaches, diced
03 - 2 Persian cucumbers, sliced
04 - 1/2 cup crumbled feta

→ Vinaigrette

05 - 3 tablespoons fresh lemon juice
06 - 1 tablespoon dijon mustard
07 - 1 tablespoon honey
08 - 1 tablespoon olive oil
09 - 1 tablespoon finely chopped basil
10 - Kosher salt and fresh ground black pepper to taste

# Steps:

01 - In a large serving bowl, combine the blueberries, peaches, cucumbers, and feta.
02 - In a jar with a lid or measuring cup, combine the lemon juice, dijon mustard, honey, olive oil, basil, salt, and pepper. Shake or whisk together the vinaigrette until well combined.
03 - Pour the vinaigrette over the salad and gently mix everything together. Taste for seasoning and garnish with extra basil.
