Blackberry Balsamic Chicken Salad (Printable Version)

Tender chicken with fresh blackberries and avocado, dressed in tangy blackberry balsamic vinaigrette for a refreshing meal.

# Ingredients:

→ Salad

01 - ½ pound boneless, skinless chicken breasts
02 - 6 cups spring mix lettuce
03 - 1 cup fresh blackberries
04 - 1 medium avocado, sliced
05 - ¼ cup red onion, sliced
06 - ¼ cup chopped walnuts

→ Dressing

07 - ½ cup fresh blackberries
08 - 2 teaspoons Dijon mustard
09 - 2 tablespoons balsamic vinegar
10 - 2 tablespoons extra virgin olive oil
11 - 2 tablespoons honey
12 - 1 teaspoon soy sauce
13 - Salt and pepper, to taste

# Steps:

01 - Saute the chicken in a cast iron skillet over medium-high heat until fully cooked through. Tent with foil and let rest while preparing the rest of the salad.
02 - Add the spring mix lettuce to a large bowl. Arrange the blackberries, avocado, red onion, and walnuts on top of the bed of lettuce. Set aside.
03 - In a medium bowl, combine the dressing ingredients except for the salt and pepper. Use a fork to mash the blackberries to release the juices. Whisk to combine. Season with salt and pepper to taste.
04 - Slice the cooked chicken and set over the salad. Drizzle with dressing. Serve immediately.
