Beef and Bean Burritos (Printable Version)

# Ingredients:

→ Beef Filling

01 - 1 tablespoon avocado oil
02 - 1 pound ground beef
03 - 1 teaspoon ground cumin
04 - 1 teaspoon chili powder
05 - 0.5 teaspoon paprika
06 - 0.5 teaspoon garlic powder
07 - 0.5 teaspoon dried oregano
08 - 0.5 teaspoon salt
09 - 0.25 teaspoon ground black pepper
10 - 2 tablespoons tomato paste

→ Burrito Assembly

11 - 6 large flour tortillas
12 - 3 cups cilantro lime rice, cooked
13 - 2 cups lettuce, thinly sliced
14 - 1 cup corn, thawed and drained
15 - 1 cup black beans, rinsed and drained
16 - 2 medium tomatoes, diced
17 - 0.5 medium red onion, diced
18 - 0.25 cup fresh cilantro, finely chopped
19 - 1 cup Mexican cheese blend, shredded
20 - 0.25 cup sour cream (optional)
21 - 1 lime, wedged (optional)

# Steps:

01 - Heat avocado oil in a large skillet over medium-high heat for 2 minutes until it sizzles. Add ground beef and stir well, breaking it into small pieces. Cook evenly until browned, about 6-8 minutes.
02 - Add cumin, chili powder, paprika, garlic powder, oregano, salt, pepper, and tomato paste. Reduce heat to medium and simmer for 3-5 minutes, stirring occasionally, until the sauce thickens. Remove from heat.
03 - Place 2-3 tablespoons of the beef mixture in the center of each tortilla. Add 0.25 cup of rice, lettuce, corn, black beans, tomatoes, onion, cilantro, and cheese. Drizzle with sour cream and lime juice, if desired. Fold the bottom of the tortilla over the filling, tuck the edges, and roll tightly.
04 - Wrap each burrito tightly in aluminum foil. Heat on a skillet over medium-high heat for 3-4 minutes per side, or bake in a preheated 350°F (175°C) oven for 20-25 minutes until heated through and cheese is melted.

# Notes:

01 - To store, keep foil-wrapped burritos in the refrigerator for up to 3-4 days or freeze for up to 3 months. Reheat wrapped burritos in a 350°F (175°C) oven.
02 - Avoid adding fresh tomatoes and lettuce when freezing as they do not thaw well.
