BBQ Chicken Quesadillas (Print-Friendly Version)

Crispy tortillas filled with smoky BBQ chicken and melty cheddar—great for dinner, snacks, or leftovers.

# What You Need:

→ Filling

01 - 2 cups cooked shredded chicken (rotisserie or any cooked chicken)
02 - 1/2 cup barbecue sauce

→ Assembly

03 - 4 large flour tortillas (8-inch)
04 - 1 cup sharp cheddar cheese, shredded

# How to Make It:

01 - Shred the cooked chicken into bite-sized pieces and toss it with barbecue sauce in a bowl until evenly coated but not drenched.
02 - Preheat a skillet over medium-low heat until warm but not smoking; a drop of water should sizzle gently.
03 - Place one tortilla in the skillet and warm for about 30 seconds until flexible.
04 - Sprinkle shredded cheddar over half the tortilla, add an even layer of the BBQ chicken mixture, then top with more cheese to help bind.
05 - Fold the empty half over the filling, gently press with a spatula, and cook for 2 to 3 minutes until the bottom is golden and crispy.
06 - Carefully flip the quesadilla and cook the other side for another 2 to 3 minutes until golden brown and the cheese is fully melted.
07 - Remove from skillet, let rest for one minute to allow cheese to set, then cut into wedges and serve.

# Important Notes:

01 - Use medium-low heat to prevent burning the tortilla before the cheese melts.
02 - Avoid overfilling to maintain structure and ease flipping.
03 - Allow quesadillas to rest briefly before slicing to keep fillings intact.
