Heat olive oil in a large skillet over medium heat. Add thinly sliced red onion and cook until softened, about 2 minutes. Add minced garlic and cook until aromatic, about 30 seconds.

Add shredded roasted chicken, smoked paprika, Worcestershire sauce, and BBQ sauce to the skillet. Stir thoroughly to combine, and cook until mixture is fully heated, 2–3 minutes.

In a microwave-safe bowl, combine unsalted butter, minced garlic, and chopped parsley. Microwave until the butter is melted.

Lay out all slices of bread on a work surface. Spread an even layer of the melted garlic butter mixture over each slice.

Flip the bread slices so the buttered side faces out. Place 6 slices with a slice of Havarti, then evenly spoon BBQ chicken mixture over the cheese. Top with remaining Havarti slices and cover with the rest of the bread, buttered side out.

Set the assembled sandwiches in a large non-stick skillet over medium heat. Cook until bottoms are golden-brown, 3–5 minutes. Flip sandwiches, reduce heat to medium-low, and cook another 3–5 minutes until cheese is melted and both sides are crisp.
