BBQ Chicken Grilled Cheese Sandwich (Printable Version)

BBQ chicken and gooey Havarti layered with garlicky, pan-toasted sourdough—comforting flavor in every bite.

# Ingredients:

→ BBQ Chicken Filling

01 - 2 tablespoons olive oil
02 - 1 small red onion, thinly sliced
03 - 3 cloves garlic, minced
04 - 2.5 cups shredded roasted chicken (approximately 350 grams)
05 - 0.5 teaspoon smoked paprika
06 - 1 teaspoon Worcestershire sauce
07 - 240 millilitres BBQ sauce
08 - 12 slices Havarti cheese

→ Garlic Butter Bread

09 - 60 grams unsalted butter
10 - 2 cloves garlic, minced
11 - 2 teaspoons parsley, finely chopped
12 - 12 slices sourdough bread or sturdy white bread

# Steps:

01 - Heat olive oil in a large skillet over medium heat. Add thinly sliced red onion and cook until softened, about 2 minutes. Add minced garlic and cook until aromatic, about 30 seconds.
02 - Add shredded roasted chicken, smoked paprika, Worcestershire sauce, and BBQ sauce to the skillet. Stir thoroughly to combine, and cook until mixture is fully heated, 2–3 minutes.
03 - In a microwave-safe bowl, combine unsalted butter, minced garlic, and chopped parsley. Microwave until the butter is melted.
04 - Lay out all slices of bread on a work surface. Spread an even layer of the melted garlic butter mixture over each slice.
05 - Flip the bread slices so the buttered side faces out. Place 6 slices with a slice of Havarti, then evenly spoon BBQ chicken mixture over the cheese. Top with remaining Havarti slices and cover with the rest of the bread, buttered side out.
06 - Set the assembled sandwiches in a large non-stick skillet over medium heat. Cook until bottoms are golden-brown, 3–5 minutes. Flip sandwiches, reduce heat to medium-low, and cook another 3–5 minutes until cheese is melted and both sides are crisp.
